Paul Altero was always interested in the restaurant industry, working for Pizzeria Uno, Resorts Casino in Atlantic City, Nordstrom’s restaurant division and Johnny Rockets. It was during his time with Johnny Rockets that Paul was inspired to launch his own burrito concept. Teaming up with his colleague and friend Bill Hart, the duo launched Bubbakoo’s Burritos in Point Pleasant, NJ in 2008. Today, Paul serves as the co-owner and co-founder of the brand, which has nearly 20 locations throughout New Jersey.
