Carol-Ann Carrington is an immigrant from the beautiful island of Barbados. She pursued a Bachelor of Science with concentration in Accounting from Jersey City State College. As an accountant, she worked in several industries including investment, entertainment, and health care. During a transitional period in her corporate life, she pursued her M.S. at John Jay College of Criminal Justice to supplement her accountant degree and expand her knowledge of fraud.
In 2018, she came up with her food product and decided to go to culinary school. Colorful Eats became Carol-Ann’s passion in 2018 when a sale of her corporate employer provided an opportunity to pursue entrepreneurship.
She was juicing carrots when her son asked for pancakes; Carol-Ann suggested that he should drink some of the carrot juice which he politely declined. Simultaneously a light bulb went off! She blended some of the carrot juice into the pancake mix. Her son ate the carrot pancakes and politely asked for more. That became her pursuit to bring colorful, vegetable and fruit-based pancake mixes to market. Approximately two years later, she launched Kickerfeast.
